Darlin' as requested here goes:-
Ingredients to blend ( u can use this for all sambal chicken, eggs etc )
Cili Paste:-
6 medium size shallots or 8 small shallots
4 cloves of garlic
5 slice of ginger
2 handful of cili kering ( depending on how hot u want it to be- my standard is 2 handful)
Belacan - shrimp paste ( up to you, i usually put 1 1/2 tablespoon)
water ( depending how thick u want your paste to be )
1 noodle bowl of ikan bilis ( cleaned and semi fried)
Oil ( u need quite alot of oil for the frying )
6 to 8 tablespoon of cili paste
1 big onion ( sliced )
2 tablespoon asam jawa
a few asam keping if u like
2 teaspoon of sugar
2 stalk of lemongrass ( for sambal chicken )
water
salt & pepper to taste
1.Fry ikan bilis to semi-crisp
2. Using the same oil from the ikan bilis, fry cili paste ( u need quite alot of oild for this )
Keep frying until, u see all the oil resurface on top of your sambal ( you can remove some oil at this point )
3.Add the asam jawa and some water and let it fry somemore
4. Add in your ikan bilis and miss all together
5. Add your sugar and if u need more sour taste add in the asam keping
6.Add your slices onion in and mix and fry everything together
7. Taste and add some salt if needed.
Dah siap...:) it took my alot of tries to get it as good as my mama's sambal, im getting closer now!!
The trick is to make sure your sambal is really garing before u add in any water or asam jawa tapi jangan sampai hangit- thats y u need alot of oil.
