Lemon Chicken

This is my all time fav dish of all time...a must dish i have to order in any chinese restaurant i go to...however, since we got here we still havent found a good chinese place, theres alot of em here but its chinese with ataste or middle east...not appetizing at all, so yesterday i have decided to try to make my own lemon chicken, i found a recipe from amy beh and made some adjustment and it turned out fabolous, the chicken was crispy and the sauce was just rite. Its worth a try..i even brun my arm makin this..teehee..

Lemon Chicken ( enuff for 4 hungry peeps )
#courtesy of amy beh & modified by me

3 chicken breast - cut into thin strips
2 lemon - squeezed for juice or 1/2 cup of lemon juice
3 tablespoon honey
3 tablespoon brown sugar
1 egg
1 teaspoon sesame oil
1 teaspoon castor sugar
1 chicken maggi cube
1 1/4 cup water
salt & pepper
2 heaping teaspoon cornflour
1 1/2 cup of plain flour or tapioca flour ( i used plaine flour )
Oil for frying

Chicken
- Marinate the chicken with 1 egg, castor sugar, sesame oil, salt & pepper and 1 heaping teaspoon of corn flour set aside for 30 mins.
- Once marinated, coat the chicken with flour and fry in hot oil.

Lemon sauce
- Add the lemon juice and let it simmer for while
- Add in the chicken cube that has been dissolve in 1 1/4 cup of water, bring it to a boil
- Add in the honey and sugar bit by bit. Once u have acquired the taste u want stop adding anymore sugar.
- Lastly add 1 heaping teaspoon cornflour and let its thickens and add some salt & pepper to taste

Pour the sauce over of the chicken and serve.

P/S- I noticed that the flour doesnt absorb the oil...which is really good!

On wednesday sharizal told that they found a little girl body that been brutally abuse and killed!!!! and my 1st question was...was it that little girl..Nurin????? and he told me that the parent said that it was not her and...i was relieved....but yesterday her told me that it was her....and my heart just dropped..how could this had happenned...how how how...???

a mummy to a baby girl myself...this is my biggest fear what has the world come too?? i dont know...

nurin's families has set up a blogspot for her since she has been missing...this might be thow teh story ends for Nurin..but there thousand of kids out there that still havent been found and still waiting to know what thier fate is....

a day at the hospital

Caveman was really sick yerterday, he couldnt do anything but lay in bed, called so many doctors and no one could see him any sooner then 830pm....yes 830 pm...now i understand how ramahdan works in cairo...arghhh!!!!..so i had to call the emergency room in a hospital and see they would take him in alhamdulilah..they say yes....please take him in and we will have a look..and off we go to the hospital...which is 1 hrs & abit drive from the house....way beyond the pyramids and the city.

we got there and the dr was waiting...thank god! We did the all the checks and alhamdullilah everything seems to be normal...the dr said he had and allergic eruption...yes...like a volcano erupted in his systems from the medications that the previous dr gave him 3 days back.....which explains the rashes and nausea and the pain is from the muscle spasm and urenal infections....at least now we know whats going on....

we got home and was asked to rest in need for at least 3 days....:D

i just hope he gets better soon..:)

P/S - safeia...said air and cucu today.....!!!!

CHOCOLATE CAKE

Pre heat the oven to 250 DegC

1. 125g butter + 1 cup of boiling water + 1/2 teaspoon salt + 1 teaspoon nescafe - melt together in a soucepan..once melted, this mix should make 1 1/2 cup, so u will need to add enuff corn oil to make this mix 2 1/5 cup.

2. 2 eggs ( beat ) + 2 cups castor sugar + 1 1/5 cup evaporated milk - whisk this together in a bowl

3. 2 cups of plain flour + 1 teaspoon sodium bocarbonate + 1 teaspoon baing powder + 1 1/5 cup cocoa powder - siff this together

1 bowl of sotong/calamari - sliced and cleaned
1 egg whites - beaten
2 1/2 cup of plain flour - season well with salt, pepper and some crushed dried chilies to flavour the flour
1 cup of cooking oil

Add in the sotong in the beaten egg whites and then coat it with the seasoned flour, do this until u finished all the sotong and deep fry them until brown.

the working times here during ramadhan has changed too....everyone finished of at 2pm....enuff time for a little siesta before buka puase...one of my cairenese fren told me that, during ramadhan, they hardly sleep....some even sleep after Sahur..some just eat all nite...some pray all nite..some just wander in the streets...shopping malls are super packs these days...i went to carrefour yesterday and it was impossbile to even push a trolley without bang in the next trolley!!..ARgghhhh.
